We affectionately called Francisco Romero de Ávila “Grandpa Paco.


It was Grandpa Paco who passed down to our father the wisdom and traditions he had learned from his own grandparents. Among these time-honored practices is the use of amphoras —tinajas—in winemaking, a traditional method we still cherish and apply in the crafting of our wines today.

A Heartfelt Tribute

For us, it is essential to determine the origin, vintage conditions, and grape variety of each wine with the utmost precision—because no two years are ever the same. As Abuelo Paco used to say, "No harvest is ever identical to the ones before it, and this is reflected in the different wines we create."

His words taught us to see each generation of our family as a new vintage: while we inherit the same knowledge passed down over the years, every generation brings its own character and nuance.

Abuelo Paco is our way of preserving our grandfather’s winemaking legacy—holding onto his teachings, his wisdom, and everything we refuse to let fade away.




Cencibel vines were carefully selected for their production. The grapes were fermented and aged for 12 months in amphoras. 

In pursuit of balance, the wine then spends 15 months aging in 225-liter oak barrels, followed by an additional year of bottle aging to achieve its final harmony.


A process that adds complexity, character, and unique balance to the wine.

Timeless Elegance

It presents a clean and bright cherry-red color with good depth and dense tears. On the nose, it stands out for its finesse, offering a perfect balance between ripe fruit and notes of cocoa, roasted coffee, and toasted aromas. On the palate, it is exceptionally well-balanced, with silky, persistent tannins that lead to a long and elegant finish.

The Perfect Pour ​

Best enjoyed slightly chilled, between 16°C and 18°C.

Gastronomic Harmony

This wine pairs perfectly with a variety of rich and flavorful dishes. It enhances the creaminess and depth of aged cheeses, while its balanced structure complements the hearty textures of legumes. Traditional stews, with their slow-cooked complexity, find a perfect match in its depth and character. Grilled meats, from tender lamb to smoky beef cuts, are elevated by its refined tannins and lingering finish, creating a truly harmonious dining experience.
